LATKES: ONLY ONE WAY TO EAT THEM

The only way to eat a Latke is right out of the pan.  They can't be saved in the oven to be served as a side dish for breakfast or supper {they get horribly flaccid}.  The dinner has to be on the table and the cook has to be cooking them while everyone is sitting down to eat.  Actually standing next to the cook with your hand out is the best way.   Don't worry about greasy fingers, that's what napkins are for.  There is something about the flavor and texture of a latke that has been flipped onto the paper towel to drain and sprinkled with salt and picked up as soon as it is cool enough not to burn the roof of your mouth.   I'm drooling while typing this!  Just the idea prompts the salivary glands to exude.
I'm a little late for Chanukah.  I do have an excuse.  I wasn't home for the holiday.  The man in my life, for the last fifty years, was left to fend for himself.  Needless to say fixing latkes was not at the top of his to do list.  He does adore them though.
What's not to like about a latke?  Latkes are downright sinful.  From the oil to fry them in, the salt needed for flavor, and the eggs; without which they would not be crispy. 
You have the high carbs in the potatoes. 

They do have a redeeming value, they are a comfort food.  They bring with their smell, when cooking, memories of past family gatherings. 
Their downfall, you can't eat just one.
